- Albert Chellborg, 1812-1890, (originally named Nils Albrecht Kjellborg [Source: Barbara Bell ]) was born and educated in Sweden, and previous to coming to America was a commissioned officer in the Swedish army. His father was for many years a government official, and his grandfather was rector of the Lutheran Church at Soder Koping, a harbor town on the Baltic coast. [Weygant, pgs 277-278]

Albert Chellborg
(originally named Nils Albrecht Kjellborg), son of Nils Nicolaus Kjellborg and Gunilla Ingeborg Theel, born April 28, 1812, in Soderkoping, Sweden, degree in Classics from Uppsala University, 1833, commissioned officer in the Swedish army, discharged 1836 from Gotha Artillery Regiment, Goteborg, came to New York from Sweden in 1837, after 6 months and not finding suitable employment went to Texas (not yet a state) where he purchased land. According to his obituary, "After two years of hardship and adventure, he returned to New York." Albert and Rosetta were married April 25, 1842, in NYC, by Rev. Phineas Rice.
Albert's date of death is May 17, 1890, in NYC, buried in Green-Wood Cemetery, Brooklyn, NY. ... Albert and
Rosetta apparently lived in Brooklyn from the time of their marriage until about 1853, when they bought a farm in upstate New York at Geneva. Eventually, in 1868 they sold their farm and moved to Manhattan where they opened Chellborg's Restaurant and Bakery. [Source: Barbara Bell ]

ALBERT CHELLBORG DEAD
THE PROPRIETOR OF A FAMOUS BAKERY PASSES AWAY.
Albert Chellborg, the proprietor of the bakery at Twenty-third-street and Third-avenue, where the students at the very best of colleges in that vicinity have lunched from time immemorial, died very suddenly of apoplexy at his rooms over the bakery Thursday afternoon. He was seventy-eight years of age, and was making arrangements to retire from the business in favor of his eldest son on May 1. These arrangements included the erection of a handsome house at Sea Cliff, L.I., where he intended to make his residence, and he had been up there looking after the finishing work on the building during the afternoon. He came back to the city at 4:30 o'clock, jumping off the horse car as it passed his door as lightly as a schoolboy and feeling in perfect health. He complained of a pain in his chest after he went up stairs, however, and fell dead an hour later.
Mr. Chellborg was born near Stockholm, Sweden, and after graduating at the Upsala University and serving a year in the cavalry ranks of the Swedish Army, came to this country in 1835. He went down to Texas with several of his countrymen to settle and grow up with the Lone Star State. After twenty years down there, and having experiences that he loved to relate to his friends in after life, Mr. Chellborg returned to the North and settled at Geneva, in Ontario County, this State, where he managed a farm until 1866, when he came to New York and established the bakery that made his name one of the most familar in the city.
His widow and seven children, four sons and three daughters, survive him. The funeral services will be held at 3:30 o'clock to-morrow afternoon at St. Paul's Church, Twenty-second-street and Fourth Avenue.

Our family version of his passing is that he was out here to approve the completion of the house, went back to the city and lay down to take a nap and slept away. I like the part in the obituary about him jumping off the horse car "as lightly as a schoolboy". I do not know just how long he stayed in Texas, another write up says 2 years, perhaps the writer mis-read his notes? Will have to try and research this more. At any rate, we do know that Albert and Rosetta were married in NYC in the 1840's, he received his citizenship papers which list him as living in Brooklyn, then he is listed in a Brooklyn directory as having a bakery there in early 1850's, soon afterwards they purchased the land near Geneva, NY.
